Ingredients

Cookies

  • ½ cup Applesauce
  • ¼ cup Unsweetened Creamy Peanut Butter
  • 1 Egg
  • 1 tablespoon Melted Coconut Oil
  • 2 cups Oat Flour

Filling

  • ½ cup Plain Greek Yogurt
  • ½ cup Unsweetened Creamy Peanut Butter

Instructions

Cookies

  • Preheat oven to 350°F. Line a baking sheet with a silicone baking mat or parchment paper.
  • Combine all wet ingredients in a bowl with a mixer or by hand.
  • Add the flour and combine well.
  • Roll out the dough onto a flat surface until about 1/3-inch thick. Using your favorite cookie cutter, cut out as many shapes as possible. Gather scraps, re-roll and cut out as necessary until all the dough is used up.
  • Place the cutouts on the prepared baking sheet.
  • Bake for 15 to 20 minutes, until the edges are light golden brown and the cookies are crunchy.
  • Transfer the cookies to a wire rack and cool them to room temperature.

Filling

  • Combine peanut butter and Greek yogurt in a bowl.
  • Spread a small spoonful of the filling on the back of one cookie.
  • Place another cookie on top.
  • Repeat with remaining cookies and filling.

Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.
