Ingredients and What They Bring to the Biscotti

These ingredients work together to create crunchy biscotti cookies with a delicious blend of flavors. Here’s what each one adds.

For the biscotti:

  • Banana adds natural sweetness, moisture, and helps bind the dough.
  • Peanut butter brings rich flavor, protein, and healthy fats.
  • Freeze-dried blueberries add bursts of fruity flavor and a pop of color.
  • Eggs provide structure and help the biscotti bake firm and crisp.
  • Coconut oil contributes healthy fats and helps create a smooth dough.
  • Oat flour forms the gentle, dog-friendly base that gives biscotti its shape.
  • Baking powder helps the biscotti rise slightly for a better texture.

For the glaze:

  • Unsweetened carob chips melt into a smooth, dog-safe chocolate alternative.
  • Coconut oil adds shine and creates a drizzle-friendly texture.

Ingredient Notes and Substitutions

You can easily swap ingredients in this recipe to match what you have on hand or what your dog prefers. Here are some helpful notes.

Safety reminder: Do not use peanut butter that contains xylitol. It is an artificial sweetener that is toxic to dogs.

  • Peanut butter can be substituted with unsweetened almond butter or sunflower seed butter as long as it is xylitol-free.
  • Banana can be swapped with unsweetened applesauce or plain pumpkin puree.
  • Blueberries can be replaced with unsweetened dried cranberries.
  • Baking powder is safe for dogs in small amounts. Source: Petco.
  • Oat flour can be made by blending old-fashioned rolled oats into a fine flour. One cup of oats yields about 3/4 cup of flour.
  • Other flours like rice flour, all-purpose flour, or a half-and-half mix of all-purpose and whole wheat flour can be used. Do not use only whole wheat flour because it is too dense. Avoid coconut flour because it absorbs too much moisture.

How to Make Biscotti for Dogs

These dog-friendly biscotti follow the classic twice-baked method for extra crunch. They’re simple to make and bake up beautifully. Here’s what to do:

  1. Combine oat flour and baking powder in a bowl.
  2. Mash the banana in a separate bowl.
  3. Add eggs, peanut butter, and coconut oil to the bowl with the banana. Stir until it’s all combined and smooth.
  4. Add the flour mixture to the wet ingredient mixture. Stir to form a dough.

  4. Place a loaf on a cutting board and cut it diagonally into 1-inch slices.

  1. Microwave the carob chips and coconut oil in 20-second increments until melted and smooth. Stir after each increment, and be careful not to microwave it for too long.
  2. Dip the biscotti in the carob glaze. Alternatively, use a spoon to either spread the glaze on one side or drizzle it in a back-and-forth pattern.
  3. Place the glazed biscotti on a wire rack or parchment paper and allow the glaze to cool and harden.

How to Store Biscotti and How Long It Lasts

Store biscotti in an airtight container at room temperature. If it is glazed, place parchment paper between the layers. It will last up to 1 week.

For longer storage, you can freeze them in a freezer-safe container or plastic freezer bag for up to 3 months.

Can people eat this biscotti?

Yes, they sure can! All the ingredients are safe for human consumption. And it’s perfect for folks watching their sugar intake. Give one a try, you may enjoy it with your coffee or tea.

Optional Glaze

  • 1/2 cup unsweetened carob chips
  • 1 tablespoon coconut oil

Instructions

  • Preheat the oven to 300°F.
  • In a small bowl, combine oat flour and baking powder.
  • In a large bowl, use a fork to mash the banana. Add egg, peanut butter, and melted coconut oil. Stir until well combined and smooth.
  • Add the flour mixture to the wet ingredient mixture. Stir to combine into a dough.
  • Gently fold the blueberries into the dough.
  • Divide the dough into two equal portions. Form each portion into a loaf about 1 to 1½” tall and 3” wide. Place the loaves on a lined baking sheet.
  • Bake for 20 minutes. Remove from the oven and allow to cool.

Optional Glaze

  • Place carob chips and coconut oil in a microwave safe container. Microwave in 20 second intervals, stirring after each interval, until melted and smooth.
  • You can either dip each piece of biscotti into the glaze, spread a thin layer on one side, or drizzle it on. Place the coated biscotti on a wire rack or parchment paper and let it cool until the coating has solidified.

Notes

Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.
