Ingredients

  • 2 cups oat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1/2 cup oat milk
  • 1/4 cup coconut oil melted
  • 1 egg
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon

Optional Frosting

  • 2 ounces cream cheese room temperature
  • 1-2 tablespoons oat milk

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with a silicone mat or parchment paper.
  • In a large bowl, combine the oat flour, baking powder and salt.
  • In a small bowl, mix together the oat milk, coconut oil, and egg until smooth.
  • Pour the milk mixture into the flour mixture and stir to combine until a dough forms.
  • Lightly dust a sheet of parchment paper with flour. Place the dough on it and use a rolling pin to roll out the dough into a rectangular shape about 1/3 to 1/2″ thick.
  • Drizzle honey over the dough and sprinkle the cinnamon over the honey.
  • Use the parchment paper that the dough was rolled out on to pick up the long edge of the dough and roll it toward the middle until a long log is formed. Cut the log into 1/2-3/4″ slices. Place the slices on the prepared baking sheet.
  • Bake for 15-20 minutes. Cool the treats completely on the baking sheet.
  • Make the frosting: In a small bowl, mix together the cream cheese and oat milk. Start with 1 tablespoon of oat milk and add more a little at a time desired consistency. Drizzle or spread the frosting on top of the cinnamon rolls.
  • Store in an airtight container in the refrigerator.
