Ingredients

  • 1 cup frozen or fresh green beans
  • 1 cup diced carrots
  • 1 3/4 cups water
  • 1 cup plain Greek yogurt
  • 1 cup white rice
  • 1 pound boneless skinless chicken thighs or breasts

Instructions

  • Preheat the oven to 350°F. Grease an 8×8-inch casserole dish. Prepare the vegetables by dicing the carrots and cutting the green beans into bite-sized pieces.
  • Pour the water and Greek yogurt into the greased casserole dish and stir together. Add the rice, diced carrots, and green beans. Place the chicken on top.
  • Cover and bake for 45 minutes, then uncover and bake for 15 minutes or until the internal temperature of the chicken reaches 165°F. Remove from the oven.
