Ingredients

  • 1 cup oat flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1½ ripe bananas divided use
  • 2 eggs
  • ½ cup peanut butter
  • ¼ cup low-fat plain Greek yogurt
  • ¼ cup melted coconut oil plus more for greasing the pan

Instructions

  • Preheat the oven to 350°F. Grease a 12-cup muffin pan with coconut oil.
  • Place flour, baking powder, baking soda, and cinnamon in a bowl. Stir or whisk to combine.
  • Peel and mash 1 banana. Place the mashed banana, eggs, peanut butter, Greek yogurt, and coconut oil in a large bowl. Stir until combined.
  • Add the flour mixture to the wet mixture and combine well.
  • Fill muffin cups to about half full.
  • Peel and slice ½ of a banana and cut the slices in half. Press 2 half slices into the top of the batter.
  • Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean. Transfer the muffins to a wire rack to cool completely.
  • Store in an airtight container in the fridge.

Notes

Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.
