Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup peanut butter
  • 2 eggs
  • 3 cups oat flour
  • 1 teaspoon ground ginger

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with a silicone mat or parchment paper.
  • Place pumpkin puree, peanut butter, and eggs in a large bowl. Stir until combined and smooth.
  • Place oat flour and ground ginger in a bowl. Stir or whisk to combine.
  • Add the flour mixture to the wet mixture and stir to combine into a rollable dough.
  • Place the dough on parchment paper and roll it out to 1/4″-1/2″ thickness.
  • Use a cookie cutter to cut shapes and place the cutouts on the prepared baking sheet. Re-roll and cut until the dough is used up.
  • Bake for 18-22 minutes. Allow to cool completely on the baking sheet.
