  • 1 cup oat flour
  • 1 cup brown rice flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup natural peanut butter
  • 1/2 cup unsweetened applesauce
  • 1/2 cup coconut milk
  • 1 1/2 tablespoons melted coconut oil

Instructions

  • Preheat the oven to 350°F. Grease or spray a 24-cavity mini bundt pan with non-stick spray.
  • Place the oat flour, brown rice flour, baking powder, and baking soda in a medium bowl and stir or whisk to combine.

      Yes, you sure can! Regular size cupcakes may take a little longer to bake. They’re done when a toothpick inserted in the center comes out clean.

    This looks interesting, but my dog is allergic to oats and rice. Have you tested these with all purpose or whole wheat flour? Seems the baking time would be the same.

      Whole wheat flour is too dense and would not be a good substitution by itself. I have not tested it with only all-purpose flour, but I think it is possible. Oat and rice flours are more delicate than all-purpose, so for baking cakes you’ll want to reduce the amount slightly, like 1 3/4 cups instead of 2 cups. But add a little more if the batter seems too wet. Baking time should be about the same.
