Ingredients

  • 1 cup oat flour
  • 1 cup brown rice flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup natural peanut butter
  • 1/2 cup unsweetened applesauce
  • 1/2 cup coconut milk
  • 1 1/2 tablespoons melted coconut oil

Instructions

  • Preheat the oven to 350°F. Grease or spray a 24-cavity mini bundt pan with non-stick spray.
  • Place the oat flour, brown rice flour, baking powder, and baking soda in a medium bowl and stir or whisk to combine.
  • Place peanut butter, applesauce, coconut milk, and melted coconut oil in a large bowl. Stir until well combined.
  • Add the flour mixture into the wet mixture and stir to combine.
  • Spoon the batter evenly into the pan, filling each bundt cake cavity about 3/4 full.
  • Bake for 15-18 minutes.
  • Let the cakes cool in the pan for a few minutes then remove them from the pan by inverting it on a wire rack. Allow to cool completely before serving.
  • Store the bundts in an airtight container in the refrigerator.

Notes

Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.
