Ingredients

  • 1 cup peeled and diced sweet potato
  • 2 cups water
  • 1 cup brown rice
  • 1 pound ground chicken
  • 1 cup frozen spinach thawed

Instructions

  • Peel and dice the sweet potato. Pour the water into a pot and bring to a boil. Add the brown rice and diced sweet potato, reduce heat to low, and simmer for 30-40 minutes or until the rice is done.
  • Brown the ground chicken in a large skillet over medium heat. Add the spinach, cooked rice and sweet potato mixture, and stir until combined. Allow to cool completely before serving.
