Ingredients

  • 1 cup oat flour
  • 1/4 cup old-fashioned oats
  • 1 teaspoon ground turmeric
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup mashed sweet potato
  • 1 egg
  • 2 tablespoons melted coconut oil

Instructions

  • You can either boil sweet potato cubes (without skin) until fork-tender or bake a sweet potato at 425°F for 45 minutes or until soft when pierced with a fork. Mash the boiled cubes or baked flesh with a fork. Cool it to room temperature before using it to make the treats.
  • Preheat the oven to 350°F. Place silicone molds on a baking sheet for stability.
  • Place mashed sweet potato, egg, and coconut oil in a bowl. Stir until combined and smooth.
  • Place the oat flour, oats, turmeric, and black pepper in a bowl. Stir or whisk to combine.
  • Add the flour mixture to the wet mixture and combine well.
  • Place the dough into the molds. Bake for 18-22 minutes. Allow to cool completely before removing from the molds.
  • Store in an airtight container in the refrigerator.
