Ingredients
4
cups
unsalted chicken broth
without onions or garlic
1
cup
wild rice blend
2
duck breasts
2
medium
carrots
peeled and sliced
1
cup
frozen or fresh green beans
cut into bite-sized pieces
Instructions
Pour the broth and wild rice into a slow cooker. Stir to combine.
Lay the duck breast, green beans, and carrots on top. Cover and cook on HIGH for 3 1/2 - 4 hours or until the duck breast is tender.
Remove the duck breasts and shred them with a fork. Add the shredded meat back into the pot and stir. Allow to cool completely before serving.
Store leftovers in an airtight container in the fridge.
Notes
Trim off the skin and fat from the duck breasts for lower fat content.
