Ingredients
1cupcooked sorghum
2salmon fillets(about 5 ounces each)
1tablespoonolive oil
1/2cupplain pumpkin puree
1cupchopped spinachfresh or frozen (thawed)
2tablespoonschopped curly parsley
Instructions
Cook the sorghum in only water according to the package instructions.
Preheat the oven to 400°F.
Place the salmon fillets on a baking sheet and brush them with olive oil. Bake for 12-15 minutes. Remove from the oven and flake the fillets with a fork.
Place the cooked sorghum, pumpkin, and spinach in a skillet or saucepan and stir. Cook over medium heat for 2-5 minutes or until the spinach is heated through.
Add the flaked salmon and gently stir it in. Allow to cool completely.
Sprinkle the parsley on top before serving.
Store leftovers in an airtight container in the fridge.
