Ingredients
2poundsbeef chuck roast
1tablespoonolive oil
2-3mediumRusset potatoes
2-3mediumcarrots
2cupsunsalted beef brothor water
Instructions
Preheat the oven to 300°F.
In a Dutch oven or large pot over medium-high heat, pour in the olive oil and heat until shimmering. Place the roast in the hot oil and brown each side.
Add the broth to the pot. Cover with the lid and bake for 1 1/2 hours.
Peel and chop the carrots and potatoes into bite-sized pieces.
Remove the pot from the oven and add the potatoes and carrots. Replace the lid and bake for an additional 1 to 2 hours until tender.
Remove the roast from the pot, shred it with forks, and return the shredded meat to the pot. Stir to combine. Allow to cool completely before serving.
Store leftovers in an airtight container in the fridge.
Notes
Do not use beef broth made with onions or garlic. Dog-friendly beef broth can be found at pet stores, in the pet aisle of some grocery stores, or online.
