Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 2-3 medium Russet potatoes
  • 2-3 medium carrots
  • 2 cups unsalted beef broth or water

Instructions

  • Preheat the oven to 300°F.
  • In a Dutch oven or large pot over medium-high heat, pour in the olive oil and heat until shimmering. Place the roast in the hot oil and brown each side.
  • Add the broth to the pot. Cover with the lid and bake for 1 1/2 hours.
  • Peel and chop the carrots and potatoes into bite-sized pieces.
  • Remove the pot from the oven and add the potatoes and carrots. Replace the lid and bake for an additional 1 to 2 hours until tender.
  • Remove the roast from the pot, shred it with forks, and return the shredded meat to the pot. Stir to combine. Allow to cool completely before serving.
  • Store leftovers in an airtight container in the fridge.

Notes

Do not use beef broth made with onions or garlic. Dog-friendly beef broth can be found at pet stores, in the pet aisle of some grocery stores, or online.
