Ingredients
Cookies
½cupApplesauce
¼cupUnsweetened Creamy Peanut Butter
1Egg
1tablespoonMelted Coconut Oil
2cupsOat Flour
Filling
½cupPlain Greek Yogurt
½cupUnsweetened Creamy Peanut Butter
Instructions
Cookies
Preheat oven to 350°F. Line a baking sheet with a silicone baking mat or parchment paper.
Combine all wet ingredients in a bowl with a mixer or by hand.
Add the flour and combine well.
Roll out the dough onto a flat surface until about 1/3-inch thick. Using your favorite cookie cutter, cut out as many shapes as possible. Gather scraps, re-roll and cut out as necessary until all the dough is used up.
Place the cutouts on the prepared baking sheet.
Bake for 15 to 20 minutes, until the edges are light golden brown and the cookies are crunchy.
Transfer the cookies to a wire rack and cool them to room temperature.
Filling
Combine peanut butter and Greek yogurt in a bowl.
Spread a small spoonful of the filling on the back of one cookie.
Place another cookie on top.
Repeat with remaining cookies and filling.
Notes
Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.The number of cookies can vary depending on the size of the cookie cutter used and the thickness of the cookies.Due to the Greek yogurt in the filling, these cookies must be stored in the refrigerator. They will last up to 5 days.
