Ingredients
Cake
1mediumapple
1 1/2cupsoat flour
1/2cupbrown rice flour
1/2teaspoonbaking powder
1/2teaspoonbaking soda
1/2cuppeanut butter
1/2cupunsweetened applesauce
1/2cupcoconut milk
1egg
1 1/2tablespoonsmelted coconut oil
Icing Drizzle
2tablespoonspeanut butter
2tablespoonsmelted coconut oil
Instructions
Preheat the oven to 350°F. Grease a 9x5-inch loaf pan with coconut oil or non-stick spray.
Peel and core the apple and cut it into small cubes.
In a medium bowl, combine oat flour, brown rice flour, baking powder, and baking soda.
In a large bowl, mix together peanut butter, applesauce, coconut milk, egg, melted coconut oil, and chopped apple until well combined.
Add the flour mixture to the wet mixture and stir to combine. Pour the batter into the prepared pan.
Bake for 23-26 minutes.
Cool the cake in the pan for about 5 minutes then remove the cake from the pan and place it on a wire rack to cool completely.
Make the icing drizzle: Stir together peanut butter and melted coconut oil in a small bowl until smooth. Use a spoon to drizzle it over the cake.
Store the cake in the refrigerator, either wrapped in plastic or foil or in an airtight container.
Notes
Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.
