Ingredients

  • 1 1/2 cups quinoa
  • 3 cups water
  • 1 cup frozen peas and carrots
  • 1 pound boneless mackerel fillets (2 large)

Instructions

  • Preheat the oven to 375°F.
  • Rinse the quinoa with cold water.
  • In a casserole dish, add the rinsed quinoa and 3 cups of water. Cover and bake for 20 minutes.
  • Remove from the oven and stir in the peas and carrots. Place the mackerel fillets on top of the mixture.
  • Bake uncovered for an additional 20 minutes or until the quinoa is cooked and the fish is flaky.
  • Remove from the oven and flake the fish with a fork. Stir everything together.
  • Allow to cool before serving.
  • Store in an airtight container in the refrigerator for up to 4 days.

Notes

Don’t skip rinsing the quinoa because it removes a natural coating called saponin that can taste bitter and cause intestinal irritation.
