Ingredients

quinoa

frozen peas and carrots

boneless mackerel fillets
(2 large)
Instructions
Preheat the oven to 375°F.
Rinse the quinoa with cold water.
In a casserole dish, add the rinsed quinoa and 3 cups of water. Cover and bake for 20 minutes.
Remove from the oven and stir in the peas and carrots. Place the mackerel fillets on top of the mixture.
Bake uncovered for an additional 20 minutes or until the quinoa is cooked and the fish is flaky.
Remove from the oven and flake the fish with a fork. Stir everything together.
Allow to cool before serving.
Store in an airtight container in the refrigerator for up to 4 days.
Notes
Don’t skip rinsing the quinoa because it removes a natural coating called saponin that can taste bitter and cause intestinal irritation.
