Ingredients

  • ½ cup Boneless Skinless Chicken Breast (about 4 ounces)
  • 1 tablespoon Olive Oil
  • 1 cup Cooked Rice
  • ½ cup Frozen Peas and Carrots
  • 1 Egg

Instructions

  • Cut raw chicken breast into small cubes.
  • Place olive oil into a skillet and heat on medium heat. Once the oil is hot, add chicken to the pan and sauté for 10 minutes or until the chicken is cooked through.
  • Move the chicken to the side of the pan and add the rice and frozen vegetables. Cook for 2-3 minutes until heated through.
  • Move the chicken and vegetables to the outside of the pan making a well in the center. Crack the egg into the well and scramble.
  • Once the egg is done, stir to combine it with the chicken and vegetable mixture.
  • Cook an additional 2-3 minutes. Allow to cool before serving.
