Ingredients

  • 1 large sweet potato
  • 1/4 cup low-fat cottage cheese
  • 1 egg
  • 3 cups oat flour

Instructions

  • Peel and cut the sweet potato into small cubes. Place the cubes in a pot and cover with water. Bring to a boil, reduce heat to simmer, and cook for 10-15 minutes or until fork tender. Drain and allow to cool. Mash with a fork, potato masher, or mixer.
  • Preheat the oven to 350°F. Place silicone molds on a baking sheet for stability.
  • Place 1 cup of mashed sweet potato and the remaining ingredients in a large bowl. Stir to combine until a sticky dough forms. Fill silicone molds with the dough.
  • Bake for 12-15 minutes. Allow to cool completely before removing the treats from the molds.
  • Store in an airtight container in the fridge.
