Ingredients
Cake
1 1/2cupscoconut flour
1/2teaspoonbaking powder
1/2teaspoonbaking soda
1/2cuppeanut butter
1/4cuplow-fat plain Greek yogurt
2eggs
3tablespoonsmelted coconut oil
1ripe bananamashed
Frosting
1cuplow-fat plain Greek Yogurt
3/4cupunsweetened shredded coconut
Instructions
Cake
Preheat the oven to 350°F. Grease three 4-inch cake or springform pans with coconut oil.
Place coconut flour, baking powder, and baking soda in a bowl. Stir or whisk to combine.
Place the peanut butter, yogurt, eggs, and coconut oil in a large bowl. Stir until well-combined and smooth. Peel and mash the banana and add to the wet mixture and combine well.
Add the flour mixture to the wet mixture and stir well to form the batter. Divide the batter evenly among the prepared pans.
Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean. Remove from the oven and let the cakes cool completely before removing them from the pans.
Frosting
Mix together yogurt and most of the shredded coconut, reserving a small amount to sprinkle on top of the cake.
Spread the frosting on the top of each layer. Stack the layers. Sprinkle reserved coconut flakes on top.
Store in an airtight container in the refrigerator.
Notes
Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.
