2boneless skinless chicken breasts
4cupschicken brothwithout onions or garlic
1cuptapioca pearls
14.5ouncescanned unsalted green beans
15ouncescanned unsalted sliced carrots
13.5ouncescanned unsalted spinach
Instructions
Slow Cooker Method
Cut chicken breasts into small cubes. Place the cubed chicken, chicken broth, and tapioca in the slow cooker. Cook on High for 3 hours.
Drain the canned green beans, carrots and spinach, add them to the slow cooker, and stir well. Cook an additional 30 minutes to 1 hour. Allow to cool before serving.
Instant Pot Method
Cut chicken breasts into small cubes. Place the cubed chicken, chicken broth and tapioca in the Instant Pot. Put on the poultry setting. Once the cycle is completed, allow it to sit 5 minutes before releasing the pressure.
Drain the canned green beans, carrots and spinach, add them to the pot, and stir well. Place on manual, high pressure for an additional 5 minutes, release the pressure once the cycle is complete. Allow to cool before serving.
Stove Top Method
Cut chicken breasts into small cubes. Place the cubed chicken, chicken broth, and tapioca in a stock pot or Dutch oven. Bring to a boil, then reduce heat to low to simmer. Cook for 15-20 minutes or until the internal temperature of the chicken reaches 165°F.
Drain the canned green beans, carrots, and spinach, add them to the pot, and stir well. Simmer for an additional 10 minutes. Allow to cool before serving.
Notes
Homemade chicken bone broth is best. Simmer chicken with bones in water with 1 tablespoon of apple cider vinegar for 3 to 6 hours. Or in a slow cooker on low for 12 to 24 hours or Instant Pot on HIGH for 1 hour.You can use fresh vegetables instead of canned.
