Ingredients

  • 2 cups oat flour
  • 1 teaspoon ground cinnamon
  • 2 carrots
  • 4 ounces low-fat cream cheese
  • 1 ripe banana

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with a silicone mat or parchment paper.
  • Place the oat flour and cinnamon in a bowl. Stir or whisk to combine.
  • Shred the carrots and place them in a large bowl. Add cream cheese and banana. Use a hand mixer to combine until smooth.
  • Add the flour mixture to the wet mixture and mix into a dough.
  • Place the dough on parchment paper and roll it out to 1/4"-1/2" thickness.
  • Use a cookie cutter to cut shapes and place them on the prepared baking sheet. Re-roll and cut until the dough is used up.
  • Bake for 22-25 minutes. Allow to cool completely on the baking sheet.
  • Store in an airtight container in the fridge.
