Ingredients

Cookies

  • 2 cups oat flour
  • 2 tablespoons carob powder
  • ½ cup unsweetened applesauce
  • ¼ cup peanut butter
  • 1 egg
  • 1 tablespoon melted coconut oil

Filling

  • 4 ounces low- fat cream cheese softened

Instructions

Cookies

  • Preheat the oven to 350°F. Line a baking sheet with a silicone mat or parchment paper.
  • Place the oat flour and carob powder in a large bowl. Stir or whisk to combine.
  • Add the applesauce, peanut butter, egg, and melted coconut oil. Stir to combine into a dough.
  • Place the dough on parchment paper. Roll out the dough until about 1/4" - 1/2" inch thick.
  • Using a cookie cutter, cut out as many shapes as possible. Gather scraps, re-roll, and cut until all the dough is used.
  • Place the cutouts on the prepared baking sheet. Bake for 15-20 minutes.
  • Transfer the baked treats to a wire rack to cool completely.

Filling

  • Place the softened cream cheese in a bowl and use a mixer to whip it until fluffy.
  • Spread a thin layer of cream cheese on the bottom of one cookie and place another cookie on top. Repeat with the remaining cookies and cream cheese.

Notes

Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.
