Melted Coconut Oil
Instructions
Preheat oven to 350°F. Grease an 8-inch square baking dish or cake pan.
In a small bowl, combine the pumpkin, peanut butter, and egg until smooth.
In a separate small bowl, combine oat flour and carob powder.
In a medium mixing bowl, combine the pumpkin, eggs, and melted coconut oil.
Add the carob and oat flour mixture and mix well.
Pour the brownie batter into the pan. Using an ice cream scoop or large spoon, drop dollops of the peanut butter mixture onto the brownie batter.
Using a butter knife or toothpick, swirl the peanut butter mixture into the brownie batter.
Bake for 30-35 minutes until a toothpick inserted into the center comes out clean. Allow to cool completely. Cut into squares.
Notes
Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.
