Ingredients

  • 4 slices bacon
  • 2 eggs divided use
  • 1/2 cup frozen chopped spinach thawed and liquid squeezed out
  • 1 1/2 cups oat flour
  • 1/2 teaspoon baking powder
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup water

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone mat.
  • Cook the bacon until crispy and chop it into small pieces.
  • Scramble 1 egg.
  • Squeeze out the excess liquid from the spinach.
  • Place the oat flour, baking powder, scrambled egg, cheese, bacon, and spinach in a large bowl and stir to combine. Add the remaining egg and water and stir to combine into a dough.
  • Place the dough on parchment paper. Roll it out and cut it with a cookie cutter. Re-roll and cut until all the dough is used. Place the cutouts on the lined baking sheet.
  • Bake for 12-15 minutes. Remove from the oven and allow to cool completely on the baking sheet.
  • Store in an airtight container in the fridge.
