Ingredients
1smallSweet Potato
1poundBeef Stew Meatcut into bite-sized pieces
1tablespoonOil(coconut, olive, or sunflower oil)
1cupWater
½cupOat Flour
1½cupsFrozen Mixed Vegetables(peas, green beans, carrots)
Instructions
Stovetop
Peel and cut the sweet potato into bite-sized pieces. Boil in water until fork-tender. Drain and set aside.
Cut the meat into bite-sized pieces if it is not already cut up.
Place oil in a skillet over medium-high heat and heat it up.
Place beef stew meat into the skillet cook until done. Remove the meat from pan and set aside.
Reduce heat to medium-low, add 1 cup water and flour to the pan, and stir until well combined. Cook, stirring often, until a thick gravy forms.
Add cooked meat and vegetables to the gravy. Reduce heat to low. Cover and cook for 10 minutes or until the veggies are heated.
Cool the stew to slightly warm or room temperature before serving it.
Slow Cooker
Cut meat into bite-sized pieces. Place oil in a skillet and heat up. Place beef stew meat into the oil and pan fry until done. Remove meat from pan and set aside. Add the water and flour to the pan and stir well, cooking on medium-low until a thick gravy forms. Pour the gravy into the slow cooker. Add meat and veggies. Stir well. Cover and cook on low for 7-8 hours or high for 3-4 hours.
Instant Pot
Cut meat into bite-sized pieces. Place oil in the bottom of the Instant pot and turn on the sauté function. Place meat into the oil and sauté until done. Remove meat from pot and set aside. (Add an extra half a cup of water for a total of 1½ cups) Add the water and flour to the pot and stir well, cooking until a thick gravy forms. Add meat and veggies. Stir well and put on the lid. Close the steam valve. Cook on high pressure for 35 minutes and allow to naturally release pressure for 10 minutes before doing a quick release.
