Ingredients

  • 2 carrots
  • 1 ripe banana
  • 1 egg
  • 2 tablespoons melted coconut oil
  • 1 1/2 cups oat flour
  • 1 cup coconut flour

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone mat.
  • Shred carrot with a hand shredder or in a food processor.
  • Place the shredded carrots in a food processor.
  • Peel and break the banana into several pieces. Place them on top of the carrots and pulse until it is a coarse mixture.
  • Add the egg and oil. Process until smooth.
  • Add the flours and process until the mixture forms a dough.
  • Place the dough on a lightly floured surface. Roll dough out to approximately 1/4" to 1/3" according to your preference.
  • Use a cookie cutter to cutout shapes and place the cutouts on the prepared baking sheet. Re-roll dough and cut shapes until the dough is used up.
  • Bake for 15-18 minutes. Transfer the baked treats to a wire rack and allow them to cool completely.
