Ingredients
1apple
1 1/2cupsoat flour
1/2cupold-fashioned oats
1teaspoonbaking powder
1teaspooncinnamon
1/2cuppeanut butter
1egg
2cupslite coconut milk
Instructions
Preheat the oven to 350°F. Grease mini muffin pans.
Peel and chop the apple into small pieces.
In a large bowl, combine the oat flour, oats, baking powder, and cinnamon.
In a separate bowl, combine the apple, peanut butter, and egg.
Add the apple mixture to the flour mixture and stir to combine. Add the coconut milk and stir to combine. Spoon the mixture into the greased mini muffin tins.
Bake for 15-18 minutes. Transfer the muffins to a wire rack to cool completely.
Store leftovers in an airtight container in the refrigerator.
Notes
Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.
