Ingredients
1sweet potato(enough for 1 cup peeled and chopped)
3/4cupoat flour
1/2teaspoonground cinnamon
1/2teaspoonground ginger
2tablespoonshoney
5tablespoonspeanut butter
1/2cupunsweetened applesauce
1egg
8ounceslow-fat cream cheeseroom temperature
Instructions
Preheat oven to 350°F. Grease an 8- or 9-inch cake pan.
Peel and chop the sweet potato. Place the chopped potato in a saucepan and add enough water to cover 1 inch. Bring to a boil, then reduce the heat to medium, and cook until fork-tender. Strain the potatoes and let them cool completely.
Place the oat flour, cinnamon and ginger in a bowl and stir or whisk to combine.
Place 1 cup sweet potatoes, honey, peanut butter, applesauce, and egg in a food processor and process until smooth.
Add the flour mixture and process until combined and smooth.
Pour the batter into the greased cake pan and spread it out evenly.
Bake for 18-22 minutes, until a toothpick inserted in the center comes out clean. Remove the cake from the pan, place it on a wire rack, and allow it to cool completely.
Place the cream cheese in a bowl and use a mixer to whip the cream cheese until fluffy. Spread the whipped cream cheese over cooled cake.
Store in an airtight container in the fridge.
Notes
Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.
