Ingredients

  • 2 fresh or frozen cod fillets or other white fish
  • 1 cup cut green beans fresh or frozen
  • 1 cup sliced carrots
  • 1 cup cubed zucchini
  • 1 tablespoon olive oil

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • Cut carrots into thin slices, cut green beans in 1-inch pieces if not already cut, and cut zucchini into small cubes.
  • Lightly coat the fish and veggies with olive oil. Place the fish and veggies on the lined sheet pan, spreading to a single layer.
  • Bake for 20-25 minutes or until the fish flakes easily with a fork or the internal temperature reaches 145°F.
  • You can use a fork to flake the fish and mix it with the vegetables or serve the fish on top of the veggies. Allow to cool completely before serving.
  • Store in an airtight container in the fridge.
