Ingredients
26-ouncesalmon fillets with the skin(total 12 ounces)
1mediumsweet potato
3/4cupbrown rice
1 1/2cupswater
1cupgreen peasfrozen or canned
Instructions
Preheat oven to 350°F.
Cook the rice with water according to package instructions.
While the rice is cooking, place the salmon, skin side down, on a baking sheet lined with parchment paper.
Peel and cut the sweet potato into small cubes (dice). Place the diced sweet potatoes on the baking sheet around the salmon in a single layer. Bake for 25 minutes until the salmon is flakes easily with a fork.
Rinse and drain the green peas and set aside.
Remove the salmon from the oven and flake the filets with a fork. Cut the skin into bite size pieces.
Place all ingredients in a large bowl and stir to combine. Allow to cool completely before serving.
Store in an airtight container in the refrigerator.
