Ingredients

  • 1 banana
  • 1 egg
  • 1 tablespoon melted coconut oil
  • 1 1/2 cups quinoa flour
  • 1/2 cup oat flour
  • 1/2 cup cooked quinoa

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone mat.
  • Mash the banana in a medium bowl. Add the egg and melted coconut oil to the mashed banana and combine well.
  • Place the quinoa flour, oat flour, and cooked quinoa in a large bowl. Stir to combine.
  • Add the banana mixture to the flour mixture and combine into a dough.
  • Roll out the dough on a lightly floured surface to about 1/4" - 1/3" thickness. Cut out treats using your favorite cookie cutter. Re-roll the dough and cut as necessary until the dough is used up. Place the cutouts on the prepared baking sheet.
  • Bake for 15-17 minutes. Remove from the oven and cool completely on the baking sheet.
