Ingredients

  • 1 cup raw unsalted pumpkin seed kernels (pepitas)
  • 1 teaspoon melted coconut oil if needed

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone mat.
  • Spread the pumpkin seeds evenly across the baking sheet. Bake for 7 minutes.
  • Let the seeds cool slightly, you want them warm but not hot.
  • Transfer the roasted seeds to a food processor.
  • Process for 12-15 minutes, stopping every 2-3 minutes to scrape down the sides and allow the machine to cool for a few minutes to keep it from overheating.
  • Keep processing and scraping until it becomes smooth.
  • After processing for 12+ minutes, if your seeds don't seem to turn into butter, you can add a teaspoon or less of melted coconut oil.

Notes

Recipe yields ½ cup (8 tablespoons) of pumpkin seed butter.
