Ingredients

  • 3 cups Oat Flour
  • 1 tablespoon Baking Soda
  • 2 Eggs
  • 1 cup Unsweetened Applesauce
  • ½ cup Pumpkin Puree
  • ¼ cup Coconut Oil melted

Instructions

  • Preheat oven to 350°F. Grease a 12-cup standard-size muffin pan or a 24-cup mini muffin pan with coconut oil.
  • Place oat flour and baking soda in a large bowl. Stir or whisk to combine.
  • Add the eggs, applesauce, pumpkin puree, and melted coconut oil. Stir until just combined. Do not overmix, there may be lumps or streaks of flour.
  • Pour batter into the greased muffin pan, filling them until ⅔ full.
  • Bake for 15 to 20 minutes for standard-sized muffins or 10 to 15 minutes for mini muffins. Muffins are done when a toothpick inserted in the center comes out clean.
  • Remove the muffins from the pans and place them on a wire rack to cool completely.

Notes
