Ingredients

Truffle Filling

  • 1/4 cup peanut butter
  • 1/4 cup melted coconut oil
  • 1/2 cup coconut flour

Coating

  • 1/4 cup carob powder
  • 1/4-1/2 cup melted unsweetened carob chips

Instructions

  • Place the peanut butter and melted coconut oil in a bowl and stir to combine.
  • Add the coconut flour and stir to combine. Let it sit for about 5 minutes.
  • Scoop out the dough using a cookie scoop (for larger truffles) or tablespoon (for smaller truffles). Use your hands to roll the dough into balls.
  • If using carob powder, put it in a small bowl.
  • If using carob chips, microwave them in 15-second increments until melted.
  • Either roll the balls in carob powder or dip them in melted carob to coat.
  • Place the coated balls on a plate with space between them and refrigerate for at least 1 hour to firm up.

Notes

Do not use peanut butter that contains xylitol, an artificial sweetener toxic to dogs.
