Ingredients
1/2cupchopped fresh kale
1smallsweet potato(½ – ¾ cup of peeled and diced)
1/2cupunsweetened applesauce
1egg
2tablespoonsmelted coconut oil
2cupsoat flour
Instructions
Preheat the oven to 350°F.
Chop the kale. Peel, cube, and boil the sweet potato until fork-tender, about 15 minutes. Drain and allow to cool to room temperature, about 15-20 minutes.
Place the boiled sweet potato cubes (about ½ to ¾ cup), applesauce, egg, and melted coconut oil in a large bowl. Mash and combine well. Stir in chopped kale.
Add the oat flour and combine into a dough.
Place silicone molds on a baking sheet and fill the molds with the dough.
Bake for 15-18 minutes.
Remove from the oven and allow to cool completely in the molds. Once cooled, remove the treats from the molds.
