Ingredients

  • 2 carrots
  • 1 cup chopped cabbage
  • 1 tablespoon olive oil
  • 1 pound ground lamb
  • 1 cup quick-cooking pearled barley
  • 2 cups water

Instructions

  • Cut the carrots into small cubes and chop the cabbage.
  • Pour olive oil into a skillet over medium-high heat. Add ground lamb and brown the meat in the skillet, stirring occasionally to break up the meat as it is cooking.
  • Drain the browned ground lamb and return it to the skillet. Add the cubed carrots, chopped cabbage, pearled barley, and water. Stir to combine.
  • Reduce heat to medium-low and cover the skillet. Cook for 15 minutes, stirring occasionally. Turn off the heat, cover, and let sit for at least 5 more minutes or until the water is absorbed. Cool completely before serving.
  • Store in an airtight container in the refrigerator.
