Ingredients
2carrots
1cupchopped cabbage
1tablespoonolive oil
1poundground lamb
1cupquick-cooking pearled barley
2cupswater
Instructions
Cut the carrots into small cubes and chop the cabbage.
Pour olive oil into a skillet over medium-high heat. Add ground lamb and brown the meat in the skillet, stirring occasionally to break up the meat as it is cooking.
Drain the browned ground lamb and return it to the skillet. Add the cubed carrots, chopped cabbage, pearled barley, and water. Stir to combine.
Reduce heat to medium-low and cover the skillet. Cook for 15 minutes, stirring occasionally. Turn off the heat, cover, and let sit for at least 5 more minutes or until the water is absorbed. Cool completely before serving.
Store in an airtight container in the refrigerator.
