Ingredients

  • 2 small carrots
  • 1 small zucchini
  • 1 pound ground chicken
  • 2 eggs
  • 1 cup old-fashioned oats
  • 2 tablespoons chopped curly parsley

Instructions

  • Preheat the oven to 350°F. Grease a 9x5-inch loaf pan.
  • Shred the carrots and zucchini. Chop the parsley.
  • Place the ground chicken and eggs in a large bowl and use your hands or a large spoon to combine.
  • Add the oats and combine.
  • Add the shredded carrots, zucchini, and parsley and combine.
  • Transfer the meat mixture to the prepared loaf pan and spread it evenly in the pan.
  • Bake for 30-40 minutes or until the center is done (internal temperature is 165°F). Remove from the oven and allow to cool completely. Slice and serve.
  • Store in an airtight container in the fridge.
