Ingredients

  • 1 medium sweet potato
  • water
  • 1/2 cup shredded cheese
  • 1 egg
  • 1/2 cup oat flour

Instructions

  • Peel and cut the sweet potato into small cubes. Place the cubes in a pot and add enough water to cover them by 1 inch. Bring to a boil and cook until tender, about 20 minutes. Drain the sweet potatoes, place them in a bowl, and mash until smooth.
  • Add the cheese and egg and mix well. Add the flour and combine well.
  • Place parchment paper in the bottom of the air fryer basket.
  • Use a cookie scoop to scoop out the dough. Place 5 scoops on the parchment paper, leaving room between them.
  • Air fry for 10-12 minutes at 350°F. Remove from the air fryer.
  • Repeat with the remaining dough.
  • Allow the bites to cool completely before serving.
  • Store in an airtight container in the fridge.

Notes

If you have an oven-style air fryer, you can cook them in one batch.
