Ingredients
Crust
2cupsOat Flour
1Egg
1tablespoonFlaxseed Meal
1tablespoonItalian Herb Seasoning Blend
1tablespoonMelted Coconut Oil
¼ - ½cupChicken Stock
Sauce
1largeSweet Potatochopped and boiled
1/4cupChicken Stock
Toppings
½Chicken Breastabout 4 ounces
½cupShredded Low-Fat Mozzarella Cheese
¼cupSliced Carrot
¼cupChopped Broccoli
¼cupChopped Cauliflower
¼cupGreen Beans
Instructions
Preheat the oven to 350°F.
Crust
Mix together the dry ingredients (oat flour, flax meal, and herb seasoning).
Add the egg, coconut oil, and chicken stock. Combine well. You may need more or less chicken stock, based on the dryness of your dough.
Place the dough on parchment paper and roll it out to about a 10-inch round or desired shape.
Place the parchment paper with the crust on it on a baking sheet.
Bake for 12 minutes.
Sauce
Peel and chop the sweet potato into ½-inch chunks.
Boil the sweet potato until tender and easily mashes with a fork, about 20 minutes.
In a bowl, mash the boiled sweet potato with a fork.
Add a small amount of chicken stock, continuing to mix it together and add more as needed until the mixture has the consistency of a thick sauce.
Spread the sauce on the cooked crust.
Toppings
Boil the chicken breast in water until done.
Use forks to shred the chicken or cut the chicken into small pieces.
Scatter the cheese, vegetables, and chicken on top of the sauce.
Bake for 12 to 15 minutes.
Cool the pizza to room temperature.
Slice the pizza.
Notes
Instead of boiling, you can cook the sweet potato in the oven or microwave. Remove the skin and mash the flesh with a fork.You can use any dog-safe vegetables for the toppings. Do not use garlic, onion, or tomato.
