Ingredients

Crust

  • 2 cups Oat Flour
  • 1 Egg
  • 1 tablespoon Flaxseed Meal
  • 1 tablespoon Italian Herb Seasoning Blend
  • 1 tablespoon Melted Coconut Oil
  • ¼ - ½ cup Chicken Stock

Sauce

  • 1 large Sweet Potato chopped and boiled
  • 1/4 cup Chicken Stock

Toppings

  • ½ Chicken Breast about 4 ounces
  • ½ cup Shredded Low-Fat Mozzarella Cheese
  • ¼ cup Sliced Carrot
  • ¼ cup Chopped Broccoli
  • ¼ cup Chopped Cauliflower
  • ¼ cup Green Beans

Instructions

  • Preheat the oven to 350°F.

Crust

  • Mix together the dry ingredients (oat flour, flax meal, and herb seasoning).
  • Add the egg, coconut oil, and chicken stock. Combine well. You may need more or less chicken stock, based on the dryness of your dough.
  • Place the dough on parchment paper and roll it out to about a 10-inch round or desired shape.
  • Place the parchment paper with the crust on it on a baking sheet.
  • Bake for 12 minutes.

Sauce

  • Peel and chop the sweet potato into ½-inch chunks.
  • Boil the sweet potato until tender and easily mashes with a fork, about 20 minutes.
  • In a bowl, mash the boiled sweet potato with a fork.
  • Add a small amount of chicken stock, continuing to mix it together and add more as needed until the mixture has the consistency of a thick sauce.
  • Spread the sauce on the cooked crust.

Toppings

  • Boil the chicken breast in water until done.
  • Use forks to shred the chicken or cut the chicken into small pieces.
  • Scatter the cheese, vegetables, and chicken on top of the sauce.
  • Bake for 12 to 15 minutes.
  • Cool the pizza to room temperature.
  • Slice the pizza.

Notes

Instead of boiling, you can cook the sweet potato in the oven or microwave. Remove the skin and mash the flesh with a fork.
You can use any dog-safe vegetables for the toppings. Do not use garlic, onion, or tomato.
